If I create an account with "None" for the AutoDJ type, can I add it as ices-cc later on and if so how please?

You can edit the customer's stream, and in the autoDJ tab, enable autodj on demand, I believe a choice is Enable autoDJ: Yes, but currently disabled. That'll allow your customer the choice of either enabling or disabling it.
