When I go to System Status and look at "load" what exactly is that telling me? Its always very low and at the moment says zero.

Also the logs don't seem to show me much of interest. Are there others I can view to show whats happening with connections etc?

In short, you want to see a load lower than the number of CPU cores available on your server, otherwise your CPU is overloaded and processes have to wait for the CPU:

And if you would like to see logs which record listener activity, those would mainly be the access logs, available for each station under it's Logs section.
